Title: PINAKBET  Recipe :  Squash, okra, eggplant, string beans, and bitter melon (ampalaya), all simmered in a broth flavored with shrimp paste (bagoong). Other common additions are pork belly, garlic, onions, tomatoes, and ginger. Procedure: 1. Prepare the vegetables: Wash and chop all vegetables into bite-sized pieces, ensuring even cooking.  2. Sauté aromatics and protein: In a pot, sauté garlic, onion, and ginger in oil until fragrant. Add pork and cook until browned. Add tomato and shrimp paste, stirring until the flavors combine.  3. Add tougher vegetables: Add squash (and sweet potato if using) and water. Cover and simmer until partially cooked.  4. Add remaining vegetables: Add eggplant, okra, and string beans. Continue to simmer until all vegetables are tender-crisp.  5. Season and serve: Season with salt and pepper to taste. Serve hot with steamed rice.
